Zucchini, Ricotta & Mint Linguine

Ingredients (included in delivery)
- 500g linguine
- 4 cloves of garlic, finely chopped
- 4 zucchini, coarsely grated
- 200g ricotta cheese
- 1 cup fresh mint, roughly chopped plus extra to serve
- 2 tsp lemon zest, finely grated
- 2 tbsp lemon juice

- 1/4 cup olive oil
- 1/2 cup pine nuts, coarsely chopped (optional)

1. Cook linguine
Bring a large saucepan of water to the boil. Add linguine and cook for 8-10 minutes, or until tender.
2. Cook pasta sauce ingredients
Meanwhile, heat olive oil in a large frying pan. Cook garlic and zucchini, stirring, for 2 minutes or until softened. Stir in ricotta until just heated through.
3. Add pasta
Drain pasta, reserving 1/4 cup of the cooking water. Toss the pasta and reserved cooking water through the zucchini and ricotta mixture. Add the fresh mint, lemon zest and lemon juice.
Season to taste and serve with pine nuts and extra fresh mint leaves on top.
