Vegetarian Rosti Pizza
with Fresh Vege toppings

Don't let the title mislead you, this ain't no greasy pizza. This Rosti (A Swiss dish) is more like a fritter consisting of potato, combined with chives, egg and flour to make the base for a delicious healthy vegetarian dinner. For a vegan option, simply swap out the mozzarella for Vegan Mozzarella from your online IGA supermarket.
Ingredients (Included in delivery)
- 1.2 kg Potatoes, grated
- ¼ cup Chives, chopped
- 1 Red capsicum, chopped finely
- 100g Semi –sundried tomatoes
- 175g Mushrooms, sliced
- 1 cup Mozzarella cheese, grated
- 30g Rocket leaves

- 1/3 cup Self-rising flour

Instructions

1. Prepare the Rosti
Pre-heat the oven to 220°C (180°C fan forced). Line 2 pizza trays (for Serves 2
only line 1 pizza tray) with baking paper. Combine potato, chives, eggs and flour
in a large bowl and season. -
2. Bake
Divide the mixture between the two trays (for Serves 2 use the whole mixture
on one tray) forming a circle. Use the back of a spoon to flatten neatly. Spray
lightly with oil and bake for 30 minutes or until golden. -
3. Add toppings
Sprinkle the rosti with the capsicum, tomato and mushrooms. Top with cheese
and bake for a further 15 minutes or until the cheese has melted. -
4. Serve
Using the baking paper lift the pizzas and place on wire racks to cool. Leave to stand for 5
minutes then serve the pizzas topped with the rocket leaves.
