Ingredients (included in delivery)
- 150g sweet potato, cut into 1 cm cubes
- 4 garlic cloves, crushed
- 400g tinned black beans, drained
- 60g plain yoghurt
- 4 corn tortillas
- Red onion, thinly sliced, to serve
- Lime wedges, for squeezing over

- Parmesan, grated, to serve (optional)
- 50g Quinoa
