Thai Beef Wraps

Ingredients (included in delivery)
- 2 limes, juiced
- 2 cm ginger, peeled and grated
- 1 fresh red chilli, deseeded and finely diced
- 1 beef rump steak
- Around 2 tomatoes, diced
- 1 Lebanese cucumber, diced
- 1/2 bunch coriander, leaves picked
- Mixed salad leaves, chopped
- 8 wraps

- 1 tbsp kecap manis
- 1 tsp fish sauce
- 2 tbsp olive oil
- Chopped peanuts to serve (optional)

What you'll need
Kecap manis, olive oil, fish sauce, peanuts (optional).
In a medium bowl, combine half of the lime juice, kecap manis, ginger, fish sauce, and chilli. Add the beef and allow to marinate for 15 minutes.
2. Cook beef
In a large frying pan, heat half of the olive oil on high. Remove the beef from the marinade and cook for 3-4 minutes on each side or until cooked to your liking. Set aside and leave to rest for 5 minutes covered in foil then thinly slice.
3. Prepare salad mixture
In a small bowl, combine the tomatoes, cucumber and half of the coriander. Add the mixed salad leaves, and dress with the remaining olive oil and lime juice.
Fill each wrap with salad and sliced beef and top with remaining coriander leaves and optional peanuts to serve.
