Sweet Potato Frittata

Ingredients (included in delivery)
- 1 cup sweet potato, 1cm cubes
- 1 garlic clove
- 2 leaves kale, washed, torn from stem and into small pieces
- 6 eggs
- 1 spring onion, sliced
- 50g feta
- 1 cup frozen peas

What you'll need

1.Prepare sweet potato
Preheat the oven to 180°C. Steam or boil the sweet potato for abut 12-14 minutes until tender.
2. Prepare the kale and garlic
Heat half of the oil in an oven proof frying-pan over medium heat. add the garlic, then kale and cook and stir until kale is wilted and bright green. Remove from pan and wipe pan clean with paper towel.
Place the peas in a heat proof bowl and cover with boiling water to defrost. Drain and set aside.
4. Prepare egg mixture
Whisk the eggs and milk together in a large bowl. Season generously with salt and pepper. Add cooked sweet potato, kale, peas and onion.
Add the remaining oil to the frying pan and place back over medium-low heat until warmed through. Pour the egg mixture into the pan and cook for a few minutes until starting to set at the edges. place into the oven and bake for 18-20 minutes. Slide out of the pan onto a board. Let cool slightly, cut into wedges and scatter with feta.
