Steak & Caramelised Cauliflower

- 4 porterhouse steaks
- Bunch kale, coarsely shredded, stem removed
- 1/2 cauliflower
- 1/2 cup flat leaf parsley, roughly chopped

- 2 tbsp olive oil
- 1/2 cup mayonnaise
- 2 tbsp wholegrain mustard

What you'll need
Olive oil, mayonnaise, wholegrain mustard.
1. Cook cauliflower
Cook the cauliflower in a saucepan of boiling salted water for 4 minutes and drain well.
2. Cook vegetables
Heat half of the oil in a large frying pan over moderate heat. Add the cauliflower and cook while stirring for 6 minutes or until browned. Add the kale and cook while stirring for a further 2 minutes or until wilted. Add the parsley, season to taste and remove from the heat.
3. Cook steak mix
Meanwhile, brush the beef with the remaining oil and preheat a chargrill or frying pan on high. Then, cook the beef for 4 minutes on each side for medium or until cooked to your liking. Transfer to a plate, cover with foil and leave to rest for 5 minutes.
Whisk the mayonnaise, 1 tablespoon of warm water and mustard in a small bowl until combined. Spoon the cauliflower mixture onto serving plates. Top with beef and mayonnaise sauce, serve.
