Spinach & Pumpkin Pasta Bake

Ingredients (included in delivery)
- 750g pumpkin, peeled and chopped into 2 cm pieces
- 400g penne pasta
- 6 eggs
- 600ml cream
- 200g bacon, roughly chopped
- 200g baby spinach leaves
- 1/2 cup parmesan
- Rocket leaves

What you'll need
Preheat an oven to a moderate 180°C (160° fan forced) and line an oven tray with baking paper.
2. Cook pumpkin
Place the pumpkin on the tray, drizzle with olive oil and bake for 15 minutes until golden and tender.
3. Cook pasta
Meanwhile, in a large saucepan of boiling water, cook the penne pasta according to packet instructions then drain and set aside.
4. Prepare pasta bake mixture
In a large bowl, whisk together the eggs and cream. Add the penne pasta, pumpkin, bacon and baby spinach then mix well to combine.
Transfer the mixture to a baking dish, sprinkle with parmesan and bake for approximately 30 minutes until bubbling and golden.
Serve with rocket leaves on the side.
