Spiced Pork Patties

Ingredients (included in delivery)
- 1 brown onion, finely diced
- 400g canned chickpeas, drained and rinsed
- 500g pork mince
- 1/2 cup fresh parsley leaves, finely chopped
- 1/4 red cabbage, finely shredded
- 1 pear, cored and thinly sliced into matchsticks
- 1 carrot, thinly sliced into matchsticks
- 100ml sour cream
- 2 tbsp lemon juice

- 2 cloves of garlic, crushed
1 tbsp cumin
- 1 tsp dijon mustard

What you'll need
Olive oil, garlic, cumin, dijon mustard.
Instructions

1. Sauté onion & garlic
Heat half the olive oil in a large frying pan over a medium heat. Sauté onion and garlic for 2-3 minutes until tender. Stir in cumin and cook for 1 minute. Set aside to cool. -
2. Prepare patty mixture
In a large bowl, roughly mash the chickpeas with a fork. Add cooked onion and garlic, pork mince and chopped parsley leaves. Mix well to combine. -
3. Prepare patties
Take 2 heaped tablespoons of the mixture at a time, and shape into a round patty approximately 2cm thick. Repeat with remaining mixture. Cook patties over a medium heat for 4-5 minutes each side, or until cooked through. -
4. Prepare slaw
To make the crunchy pear slaw, combine the red cabbage, sliced pear and carrot in a large bowl and toss. -
5. Prepare sauce
Make the creamy dipping sauce by combining all ingredients in a small bowl and mixing until well combined. -
6. Serve
Serve spiced pork patties with a side of the crunchy slaw and top with the creamy sauce.
