Spiced Pork Lettuce Cups

Ingredients (included in delivery)
- 1 brown onion, finely chopped
- 500g pork mince
- 1 red capsicum, chopped
- 1 fresh chilli, seeds removed, finely chopped
- Cherry tomatoes
- 1/2 cup fresh coriander, finely chopped
- 1 iceberg lettuce, leaves separated and washed
- 1 avocado, sliced
- Greek yoghurt, to serve

- 1 tbsp olive oil
- 1 garlic clove, crushed
- 2 tbsp tomato paste
- 1 tsp cumin
- 1 tsp paprika

What you'll need
Olive oil, garlic, tomato paste, cumin, paprika.
Heat a fry pan over medium heat and add the olive oil.
2. Cook onion, garlic & mince
Sauté the onions and garlic until soft. Add the pork mince and cook until evenly browned.
3. Add remaining ingredients to be cooked
Add the capsicum, chilli, cumin, paprika and tomato paste and stir to combine. Add a splash of water then cook for a further couple of minutes until the sauce begins to thicken. Stir through the cherry tomatoes and coriander.
Spoon into the iceberg lettuce leaves to serve. Top with the avocado, natural yoghurt and extra coriander leaves.
