Spiced Chorizo Rice

Ingredients (included in delivery)
- 1 brown onion, finely chopped
- 2 chorizo sausage, diced
- 1 cup frozen peas
- Punnet cherry tomatoes, halved
- 1/4 cup fresh parsley, roughly torn, to serve
- 2 lemons, 1 cut into wedges, 1 juiced for salsa
- 1 avocado, diced
- 1 Lebanese cucumber, seeded, diced
- 1 red onion, finely chopped
- 1 1/2 cups white rice

- 1 tbsp olive oil
- 2 cloves of garlic, crushed
- 1 tsp ground paprika
- 1 cup chicken stock

1. Begin to cook rice mixture ingredients
In a large saucepan, heat olive oil on a medium heat. Sauté onion, chorizo and garlic for 4-5 minutes until the onion is tender and chorizo is slightly crisp. Stir in paprika and cook for 1 minute. -
2. Cook rice
Add rice to pan, and mix to coat grains. Stir in chicken stock and 2 cups of water. Bring to the boil. Reduce heat to low. Simmer, covered, for 12-15 minutes, until all the liquid is absorbed, and rice is tender. -
3. Prepare salsa
Meanwhile, to make the avocado salsa, combine avocado, Lebanese cucumber, red online and lemon juice. Season to taste. -
4. Serve
Stir peas and cherry tomatoes through rice. Serve topped with avocado salsa, fresh parsley and a squeeze of lemon juice.
