Spiced Chicken & Bean Salad

Ingredients (included in delivery)
- 2 tbsp cajun spice
- 500g chicken breast fillets
- 200g green beans
- 1 red capsicum
- 2 corn cob
- 1/2 cup parsley, coarsely chopped
- 1 cup green yoghurt
- 1 tsp lime zest
- 2 tbsp lime juice
- Lime wedges, to serve

What you'll need
Oil, salt & pepper.
Using hands, rub the spice mix over the chicken to coat. Heat oil in a large frying-pan. Add chicken, cook for 4 minutes each side or until browned and cooked through. Transfer to a heat-proof plate. Cover with foil; rest for 5 minutes. Slice.
2. Prepare beans and corn
Meanwhile, cook the beans and corn in a saucepan of boiling water for 3-5 minutes or until just tender. Drain; refresh under cold water. Slice kernels off cob and transfer to large bowl.
3. Combine main ingredients and toss
Add capsicum, chicken and parsley. Toss to combine and season to taste.
4. Prepare dressing
Whisk yoghurt, zest, lime juice and warm water in small jug. Season to taste and wis. Drizzle over salad.
5. ServeServe with lime wedges.
