Spiced Beef Enchiladas

Ingredients (included in delivery)
- 500g beef mince
- 1 red onion, finely chopped
- 1 packet taco seasoning
- 1 red chilli, deseeded, finely chopped
- 8 white wraps
- 400g canned chopped tomatoes
- 2/3 cup shredded cheese
- 1 avocado, mashed
- 1 tomato, finely diced
- 1 lemon, juiced
- Mixed salad leaves to serve

- 2 tbsp olive oil, plus 2 tbsp for salad dressing
- 2 tbsp balsamic vinegar

What you'll need
Olive oil, balsamic vinegar.
1. Preheat oven & grease baking dish
Preheat oven to 200°C. Lightly grease a large shallow baking dish.
2. Cook mince
In a large frying pan, heat the olive oil on high. Cook beef mince for 4-5 minutes, until evenly browned and cooked through. Add onion and taco seasoning. Cook for 2-3 minutes.
3. Prepare tortilla
Spread approximately half a cup of beef mixture lengthways down each tortilla. Fold both ends over, and roll up to enclose the filling.
4. Add to tray & bake
Arrange wraps seam-side down in the dish. Spoon canned tomatoes over the top. Sprinkle with cheese. Bake for 15-20 minutes until the cheese melts.
5. Make guacamole
Meanwhile to make the guacamole, combine the avocado, tomato and lemon juice in a small bowl and mix well.
Serve enchiladas topped with guacamole, and a side of mixed salad leaves dressed in olive oil and balsamic vinegar.
