- 500g potatoes, peeled
- 1 brown onion, thinly sliced
- 8 eggs, lightly whisked
- 1 red chilli, deseeded and finely chopped
- 1/2 cup cheddar cheese, grated

- 2 tbsp red wine vinegar

What you'll need
Olive oil, red wine vinegar.
1.Prepare the potatoes
Place the potatoes in a saucepan and cover with cold water. Bring to a boil and cool for 10 minutes or until just tender. Drain and allow to cool slightly then cut into 2cm pieces.
2. Prepare onion
Heat the oil in a frying pan over moderate heat. Add the onion and cook, while stirring for 5 minutes or until tender. Cover and cook for 5 minutes or until caramelised. Add the vinegar and bring to the boil. Remove from the heat and season to taste.
Preheat and oven grill to high. Heating the remaining oil in an oven proof frying pan (20cm base approx.) over moderate heat. Add the potatoes and cook for 3 minutes until golden. Combine the egg and chilli and then pour over the potato.
4. Add cheese and onion
Top with the cheese and onion and cook for 5 minutes or until the tortilla edges start to set. Then, place under grill for 5 minutes, until golden and set.
Allow to cool and serve.
