Smoked Salmon & Feta Pizza

Ingredients (included in delivery)
- 2 cups Greek yoghurt
- 1 cup tomato paste
- 2 cups shredded mozzarella
- 1 red onion, finely sliced
- 100g smoked salmon, flaked
- 1/2 cup feta, crumbled
- 1/2 cup fresh parsley, roughly torn
- Mixed Salad leaves, roughly chopped

- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 tbsp black pepper
- Cooking spray
- 2 cups self-raising flour

What you'll need
Olive oil, balsamic vinegar, black pepper, cooking spray, self-raising flour.
1. Preheat oven
Preheat oven to 180°C.
2. Make pizza base
To make the dough, combine flour, greek yoghurt and black pepper in a large bowl and mix well. Turn dough out onto a floured board. Knead for approximately 5 minutes. Roll dough out using a floured rolling pin, into a round pizza base, approximately 25cm in diameter and 1cm thick (x2 for Serves 4). Transfer base to a baking tray lined with paper baking. Spray with cooking oil spray. Bake base for approximately 10 minutes until the base is starting to colour. Take out of the oven and allow to cool for 5 minutes.
3. Prepare pizza
Top pizza base with a thin layer of tomato paste. Add shredded mozzarella to cover the base. Top with red onion, salmon pieces, crumbled feta and fresh parsley.
Bake in the oven for around 15 minutes until golden.
5. Prepare salad
Meanwhile to make the side salad, combine the olive oil and balsamic vinegar. Toss through mixed salad leaves.
Slice pizza into triangles and serve with a salad.
