Ingredients (included in delivery)
- 1 rump steak
- 1 carrot, cut into matchsticks
- 1 tbsp lime juice
- 100g salad leaves
- 1 red onion, sliced thinly
- ½ lime, quartered
- ¼ cup red curry paste

- 1 ½ tsp water
- ½ garlic clove, crushed
- 125g rice
- Cooking oil spray
- 1 tbsp sesame oil

1. Prepare beef
Brush the beef with ½ the curry paste. Spray the beef with oil. Cook beef occasionally brushing with the remaining curry paste for 3 minutes each side . Transfer to a heatproof plate, cover with foil and rest for 5 minutes. Slice the steak across the grain at a thickness of around 1cm.
Slice the carrots into matchsticks, add water and microwave on high for 30 seconds or until just tender.
Cook the rice until soft, then drain.
4.Prepare rice salad
Combine the rice and carrot in a bowl. Add sesame oil, lime juice and garlic then stir through.
Combine the rice salad, salad leaves, onion and beef in a large bowl with lime cheeks.
