This a quick way to make ragù with maximum flavour.
Ingredients & quantities (Included in delivery)
280g egg noodles, cooked according to the packet instructions
200g bacon, cut into 1 cm pieces
1 small onion, roughly chopped
500g mixed sliced mushrooms
Handful fresh parsley, chopped
Ingredients (pantry items)
- 1 1/2 tbsp olive oil
- 1 garlic clove, crushed
- Salt
- Freshly ground black pepper
- 1 tbsp tomato paste
- 1 1/2 sun-dried tomato paste (or extra regular tomato paste)
- 1 rosemary stalk, leaves picked and roughly chopped
- 200ml vegetable stock
- 1 tsp red wine vinegar
Ingredients (optional, not included in delivery)
- 100g spiralized courgette, optional
- Shaved parmesan, to serve
- Creme fraiche, to serve
- Sweet chilli sauce, to serve
