Pork, apple and a touch of spice. This simple dish highlights some classic flavour combinations that you'll love to have on the dinner rotation. Pork is a great source of iron and vitamin B12 which is essential for good energy levels.
Ingredients (included in delivery)
- 4 pork loin chops, trimmed
- 2 apples, cored and thinly sliced
- ½ green cabbage, finely shredded
- 1 lemon, cut into wedges
- 4 potatoes, peeled and diced
- ½ red chilli, deseeded and finely diced

- 50g butter
- 2 tbsp olive oil
- 2 tsp salt

1. Prepare the meat
In a small bowl, combine half the oil, chilli and salt. Rub over chops. -
2. Cook and mash potatoes
In a medium saucepan of boiling water, cook potatoes for approximately 10 minutes, or until soft. Drain and mash with butter. -
3. Cook the pork
Meanwhile, in a large frying pan over a high heat, cook the chops for 4-5 minutes each side until cooked through. Transfer to a plate, cover and rest to keep warm. -
4. Prepare the slaw
In the same pan, heat the rest of the oil on medium. Cook apples and cabbage for 4-5 minutes until cabbage is wilted. -
5. Serve
Serve pork with mash and cabbage and apple slaw. -
6. Serving suggestiong
Serve with a squeeze of lemon.
