Pesto Chicken Spaghetti

- 500g spaghetti
- ⅔ cup basil pesto
- 200g rocket leaves
- 1kg chicken breast fillets
- 80g shaved parmesan, to serve

What you'll need
1. Prepare pasta
Bring a large pan of salted water to the boil and add the pasta and cook according to package directions. Drain and return to the pan. Stir through ½ of the pesto then cover and keep warm.
2. Marinate chicken
Meanwhile, combine the chicken and the remaining pesto in a small bowl. Stir well to coat the chicken in pesto.
3. Cook chicken
Spray a frying pan with cooking oil spray and heat on medium. Cook chicken for 4-5 minutes turning frequently until cooked through and golden. Slice the chicken into pieces of desired size.
4. Combine all ingredients
Stir the chicken and rocket into cooked pasta then transfer to serving plates and top with shaved parmesan. Season to serve.
