- 1 onion, roughly chopped
- 1 zucchini (courgette), roughly chopped
- 1 small eggplant (aubergine), roughly chopped
- 130g pitted black and kalamata olives
- 1 x 400g tin chopped tomatoes
- 2 tbsp tomato puree
- 1 lemon, juiced
- Handful basil, chopped
