Mushroom & Rocket Linguine

Ingredients (included in delivery)
- 400g dried linguine
- 2 cups continental parsley leaves
- 50g walnuts
- 40g parmesan
- 200g button mushrooms, sliced
- 1/2 lemon, juiced
- 2 tbsp lemon zest
- Rocket leaves

- 2 clove of garlic
- 150ml olive oil

What you'll need
Garlic, olive oil.
Cook the linguine in a large saucepan of boiling water for approximately 5-6 minutes. Drain, reserving a few tablespoons of the cooking water, and return to pan.
2. Prepare pesto
Meanwhile, pulse the parsley, walnuts, parmesan, garlic, lemon zest and olive oil in a food processor to a coarse puree.
3. Sauté mushrooms
Sauté the mushrooms over a medium heat until soft.
4. Toss & serve
Add the pesto and pasta along with the reserved cooking water to the pan, toss to combine. Serve hot with extra parmesan and fresh rocket leaves on top.
