Mushroom & Mince Pasta Bake

Ingredients (included in delivery)
- 250g penne pasta
- 1 brown onion, finely chopped
- 2 cloves of garlic finely chopped
- 500g beef mince
- 1 carrot, grated
- 1 zucchini, grated
- 2 sticks celery, finely chopped
- 200g button mushrooms, thinly sliced
- 400g canned chopped tomatoes
- 2 cups grated mozzarella cheese
- Mixed salad leaves, coarsely chopped

What you'll need
Preheat an oven to 180°C (160°C fan forced).
2. Cook pasta
Bring a large pot of salted water to the boil and cook pasta until al dente, drain.
3. Cook mince mixture
Meanwhile, heat the olive oil in a large frying pan over a medium heat and fry the onion until softened. Increase the heat to high and add the garlic and beef mince. Cook, while stirring, until the mince is well browned.
4. Cook vegetables
Add the carrot, zucchini, celery, button mushrooms, tomato paste, and cherry tomatoes. Cook for a further 15 minutes, stirring occasionally, or until the sauce has thickened then stir through the cooked pasta.
5. Cook in oven
Spray a large ovenproof dish with cooking oil spray. Transfer the mixture to the oven proof dish and sprinkle with mozzarella.
6. Bake & serve
Bake for 20 minutes or until golden brown. Serve.
