Mexican Mince Bake

Ingredients (included in delivery)
- 1 red onion, diced
- 2 corn cobs, kernels removed
- 500g beef mince
- 2 zucchini, finely chopped
- 400g can diced tomatoes
-175g corn chips
- 1/2 cup sour cream
- Coriander leaves, to serve
- 2 tsp lemon juice
- 1 avocado, seed removed and flesh scooped out
- 35g taco seasoning
- 1/2 cup grated tasty cheese

- 2 tsp olive oil
- 1 cup chicken stock

What you'll need
Olive oil, taco seasoning, chicken stock, grated tasty cheese
1. Preheat oven
Preheat oven to 200°C
2. Sauté onion and corn and brown mince
In a large, deep frying pan, heat oil on medium heat. Sauté onion and corn for 3-4 minutes until tender. Add mince and brown for 4-5 minutes, breaking up any lumps with a wooden spoon.
3. Stir in the remaining mince mix ingredients
Stir zucchini, tomatoes, taco mince and chicken stock through mince. Bring to the boil and simmer for 5 minutes.
4. Arrange mince mix and corn chips to bake
Arrange half the corn chips in a baking dish. Spoon mince over the top and then sprinkle remaining chips and grated cheese. Bake for 10-12 minutes, or until golden.
5. Prepare guacamole
Meanwhile, mash avocado in a bowl with lemon juice and season to taste.
Serve with sour cream, guacamole and coriander.
