Mediterranean Sausage & Vegetable Tray Bake

Ingredients (included in delivery)
- 500g beef sausages, halved
- 2 celery stalks, trimmed, thinly sliced
- 1 red onion, cut into wedges
- 700g passata
- 2 zucchini, halved lengthways, finely sliced
- 1 eggplant, diced
- 800g potatoes, peeled, quartered
- 2 tbsp fresh parsley, finely chopped

- 2 tbsp olive oil
- 1 clove of garlic, crushed
- 1 tbsp ground cumin
- 1 tbsp paprika
- 20g butter

What you'll need
Olive oil, cooking oil spray.
1. Preheat oven
Preheat oven to a moderate 180°C.
2. Cook sausages
Heat olive oil in a large frying pan on a high heat. Cook sausages for 4-5 minutes, turning, until golden all over. Transfer to a shallow baking dish.
3. Cook remaining tray bake ingredients
Sauté celery, onion and garlic in the same pan on high for 2-3 minutes. Add spices and stir to coat vegetables. Stir in passata, zucchini and eggplant. Season to taste. Bring mixture to the boil. Take off the heat and pour over the sausages.
Cover dish with foil and bake for 10 minutes.
5. Prepare mash
Meanwhile, bring a large saucepan to the boil. Add potatoes and cook for 8-10 minutes until tender. Drain and mash with butter.
Serve sausage and vegetable tray bake with a side of mashed potato, and sprinkle of parsley on top.
