Lemon Parsley Barramundi

Ingredients (included in delivery)
- 4 barramundi fillets
- 1/4 cup parsley, chopped
- 1 tbsp lemon zest
- 2 garlic cloves, crushed
- 1 green capsicum, cut into thin rings
- 1 lebanese cucumber, sliced
- 250g cherry tomatoes, quartered
- 1 red onion, cut into rings
- 1/2 cup olives
- 100g feta, crumbled
- 1 tbsp lemon juice
- Lemon wedges to serve

- 1/2 tsp dried oregano leaves

What you'll need

1. Sprinkle fish with paprika
Sprinkle both sides of fish with sweet paprika and set aside.
2. Prepare gremolata
To make gremolata, chop parsley, lemon zest and crush garlic. Combine and then put onto plate.
3. Prepare Greek salad
To make Greek salad cut the capsicum and onion into rings, thinly slice cucumber and quarter tomatoes. Combine ingredients in a bowl. Add olives and crumbled feta. Drizzle with lemon juice and oregano leaves to serve.
4. Cook fish
Heat a large nonstick frying pan over moderate heat. Add fish to the pan; cook for 3-5 minutes each side or until golden brown and cooked. Lift fish from pan and place on gremolata; turn to coat.
Spoon salad onto serving plates. Top with fish and lemon wedges.
