- Around 4 potatoes, washed and scrubbed, then cut into wedges
- 500g beef sausages
- 2 green capsicum
- 1 red onion
- 400g canned chopped tomatoes
- Salad mix

- 2 tbsp olive oil
- 1 tsp cumin
- 2 tsp sweet paprika

What you'll need
Olive oil, cumin, sweet paprika.
Preheat oven to 200°C (180°C fan forced). Place potato wedges into a saucepan filled with water. Bring to the boil, and cook potatoes for 8 minutes until just starting to soften. Place the wedges on a baking tray. Drizzle half the olive oil over the wedges and sprinkle with cumin and half of the paprika. Cook wedges in oven for approximately 20 minutes until golden, turning half way through.
2. Cook sausages
Meanwhile, heat a large frying pan over a moderately high heat. Add the sausages and grill for approximately 10 minutes or until cooked through. Set aside and cover to keep warm.
3. Cook vegetables
Reduce heat to medium. Add the paprika, green capsicum and red onion and cook for 5 minutes until starting to soften. Add the tomatoes, and then cover and cook for 5 minutes or until reduced slightly.
Serve the spiced capsicum on top of the sausages, with potato wedges and salad leaves on the side.
