Family Shephard's Pie

Ingredients (included in delivery)
- 1 onion
- 1 garlic clove, crushed
- 500g beef mince
- 450g passata
- 100g mushrooms, sliced
- 1 stalk celery, finely diced
- 1 carrot, finely diced
- 1 zucchini, finely chopped
- 4 potatoes, cooked and mashed
- 2 parsnips, cooked and mashed
- 1 cup tasty cheese, grated

- 2 tbsp olive oil
- 2 cups beef stock
1 tbsp worcestershire sauce

What you'll need

1. Cook the beef mince
In a large frying pan, heat the oil on high and saute the onions and garlic for 1 - 2 minutes or until tender. Add the minced beef and cook for a further 5 - 6 minutes breaking up any lumps, until the beef is evenly browned.
2. Add passata, vegetables and Worcestershire sauce
Stir in the passata, mushrooms, celery, carrot, zucchini, stock and Worcestershire sauce. Simmer for 25-30 minutes stirring occasionally until reduced.
3. Preheat the oven
Preheat the oven to a moderate 180°C.
4. Boil potato and parsnips
For the topping, place the potatoes and parsnips in a large pot of salted water. Bring to a boil and cook for 15 minutes until tender. Drain and mash then season to taste.
5. Prepare ingredients to bake
Spoon the mince mixture into a casserole dish and spread the mash over the top roughing up the surface with a fork. Sprinkle with cheese and bake for 15 minutes until golden brown and bubbling.
