Ingredients (included in delivery)
- 800g canned chickpeas, drained and rinsed
- 1/2 cup fresh parsley leaves
- 1 serving taco spice mix
- 8 white wraps
- 1 cos lettuce, shredded
- Cherry tomatoes
- 1 cucumber, thinly sliced
- 1 beetroot, peeled and grated
- 1/2 cup tzatziki, to serve

- 1 eggs
- 1/2 cup breadcrumbs
- 2 tbsp olive oil

What you'll need
Eggs, breadcrumbs, olive oil.
1. Prepare falafel
In a food processor, blitz chickpeas, parsley, taco spice mix, eggs and breadcrumbs together until smooth. Use one tablespoon of mixture at a time to create a small falafel ball. Repeat with remaining mixture.
2. Cook falafel
Heat olive oil in a large frying pan over a medium heat. Add falafel balls to the pan and cook for around 3 minutes on each side or until golden brown.
Heat wraps in the microwave for around 15 seconds before servings. Top each wrap with shredded lettuce, cherry tomatoes and cucumber, grated beetroot and finally a few falafel balls. Add a dollop of tzatziki before serving.
