Curried Beef Rice

Ingredients (included in delivery)
- 2 brown onions
- 500g beef mince
- 2 garlic cloves, peeled
- 2 green chillies, seeded and chopped
- 400g can chopped tomatoes
- 1 cup greek yoghurt
- 1/2 cup coriander leaves
- Lemon wedges, to serve
Ingredients (pantry items)
- 300g rice
- 560ml beef stock (from powder)
- 70g slivered almonds, toasted (optional)
- 2 tbsp olive oil
- 1 tbsp curry powder

What you'll need
Rice, beef stock powder, slivered almonds, olive oil, curry powder.
Place rice and beef stock in a large microwave-safe container. Cover and cook on high for 16 minutes.
2. Cook beef mince
Heat pan and add oil. Cook beef mince, stirring with a wooden spoon and breaking up an lumps, until browned. Turn heat to medium-low.
3. Prepare curry paste and add to mince
While the beef is cooking, place the onion garlic and chilli in a food processor. Blitz until finely chopped, but not mushy. Add this mixture to the mince and cook for 5 minutes.Then add curry powder and cook until fragrant.
4. Add remaining ingredients and cook down
Add the zucchini, tomatoes and half the yoghurt to the beef mixture. Increase the heat to high. Place the lid on the pan and cook for 5 minutes, stirring occasionally. Stir through rice and cook until mix is dry.
Sprinkle with almonds (optional) and coriander. Serve with the remaining yoghurt.
