Creamy Mushroom Spaghetti

Ingredients (included in delivery)
- 400g thin spaghetti
- 1 clove garlic, finely chopped
- 400g mushrooms, sliced
- 6 spring onions, sliced
- 1/2 bunch fresh parsley, finely chopped
- 300ml sour cream
- 2 tbsp parmesan, grated

- 2 tbsp water
- 1 tbsp olive oil
- 20g butter
- 1/2 tsp ground black pepper
- 1 tsp sweet paprika
- 1 tsp dried oregano

What you'll need
Olive oil, butter, black pepper, sweet paprika, dried oregano.
Cook the spaghetti a large pan of salted boiling water until soft. Drain and return to the same pan.
2. Prepare the sauce
Meanwhile heat the oil and butter in a large frying-pan on medium heat, add the garlic and cook gently for 2 minutes. Add the mushrooms and cook for 5 minutes, or until tender and golden. Add the spring onion, parsley, pepper, paprika and oregano. Stir over heat for a further minute, then stir in the sour cream and water.
3. Combine all ingredients and serve
Stir the mushrooms sauce through the cooked spaghetti and heat through. Season with freshly ground black pepper to taste. Serve with parmesan cheese.
