Creamy Bacon & Spinach Pasta

Ingredients (included in delivery)
- 400g spaghetti
- Short cut bacon, finely sliced
- 2 tbsp capers, drained and rinsed
- 1 lemon, zest finely grated and juiced
- 1/2 cup sundried tomatoes, roughly chopped
- 300ml sour cream
- 200g baby spinach

- 40g butter
- Parmesan to serve (optional)

What you'll need
Butter, parmesan (optional).
In a large saucepan of boiling water, cook the spaghetti following packet instructions and then drain well.
2. Sauté bacon
Melt the butter in the same saucepan over a medium heat and then sauté the bacon for 4-5 minutes or until crisp. Add the capers and the lemon zest.
3. Toss & serve
Add the hot pasta, lemon juice, tomatoes, sour cream and the spinach. Then toss until warmed through. Season to taste and serve sprinkled with optional parmesan, if using.
