- 2 zucchini, coarsely grated
- 2 carrots, peeled and coarsely grated
- 250g haloumi
- 30g panko breadcrumbs
- 2 tbsp finely chopped flat-leaf parsley, optional
- 1 lemon
- 125g good-quality whole egg mayonnaise
