Ingredients (included in delivery)
- 100g unsalted butter, at room temperature
- 2 tbsp fresh parsley, finely chopped
- 1 tsp finely grated lemon zest
- 3 tsp lemon juice
- 500g chicken breast fillets
- 1 head broccoli, cut into small florets
- 200g green beans

- 1 clove garlic, crushed
- 1 tbsp olive oil
- 1 egg, lightly whisked
- 1/2 cup plain flour
- 1/2 cup breadcrumbs

What you'll need
Garlic, olive oil, egg, plain flour, breadcrumbs.
Preheat the oven to 200°C (180°C fan forced).
2. Prepare garlic butter
Combine the butter, garlic, parsley, lemon zest and lemon juice in a small bowl.
3. Prepare chicken breast
Using a sharp knife, carefully cut horizontally into the short side of each chicken breast to create a pocket.
4. Spread garlic butter into chicken
Spread the butter mixture into each pocket. Secure with toothpicks.
5. Crumb chicken
Place the flour, egg and breadcrumbs into 3 separate shallow bowls. Dip the chicken into flour to coat, followed by the egg, and finally the breadcrumbs.
6. Heat oil
Heat the oil in a large frypan over a moderate heat.
7. Cook chicken
Cook the chicken for 2 minutes on each side, until golden. Transfer to a baking tray and bake in oven for 15 minutes or until the chicken is cooked through.
Meanwhile steam the broccoli and green beans. Serve.
