- 1 onion, diced
- 100g Pancetta, diced
- 600g skinless chicken thigh fillets, diced
- 250g field mushrooms, sliced
- 2 carrots, cut into chunks
- 250ml tomato puree
- 500ml chicken stock
- 2-3 sprigs thyme
- 2-3 bay leaves
