Chicken & Olive Sauté

Ingredients (included in delivery)
- 500g chicken thigh fillets, trimmed and sliced
- 1 red onion, cut into wedges
- 2 garlic cloves, thinly sliced
- 1 eggplant, sliced
- 1 green capsicum, roughly chopped
- 3 tomatoes, chopped
- 1/4 cup black pitted olives, halved
- 1/2 cup fresh basil leaves

- 200g medium grain rice
- 1 tbsp olive oil
- 1 tsp chilli flakes

What you'll need
Medium grain rice, olive oil, chilli flakes.
1.Cook chicken, onion and garlic
In a large frying pan, heat the oil on high and sauté chicken until golden and brown. Add the onion and garlic, sauté until the onion is tender.
2. Cook rice
Meanwhile, cook rice to packet instructions.
3. Add vegetables
Stir in the eggplant, capsicum, tomatoes, olives and chilli. Cook until eggplant is tender.
Season to taste and serve with fresh basil.
