Cherry Tomato & Bocconcini Pizza

Ingredients (included in delivery)
- 2 cups greek yoghurt
- 1/2 cup tomato paste
- 1 punnet cherry tomatoes
- 200g prosciutto, torn into small pieces
- 200g bocconcini, roughly chopped
- Rocket leaves, to serve
- 1/2 cup fresh basil leaves, roughly torn, to serve

- 2 cups self-raising flour
- 1 tbsp black pepper
- Cooking spray oil
- 2 cloves of garlic, crushed

What you'll need
Self-raising flour, black pepper, cooking oil spray, garlic.
1. Preheat oven
Preheat the oven to 180°C.
2. Prepare dough
To make the dough, combine the flour, greek yoghurt, garlic and pepper in a large bowl and mix well. Turn dough out onto a floured board. Knead for approximately 5 minutes. Roll dough out using a floured rolling pin, into a round pizza base, approximately 25cm in diameter and 1 cm thick (x2 for Serves 4). Transfer base to a baking tray lined with baking paper. Spray with cooking oil spray. Bake base for approximately 10 minutes until base is starting to colour. Take out of the oven and allow to cool for 10 minutes.
3. Prepare pizza
Spread a thin layer of tomato paste over the pizza base. Top with cherry tomatoes, prosciutto and bocconcini pieces.
Bake in the oven for approximately 15 minutes until golden.
To serve, top with fresh rocket leaves and garnish with basil.
