Cheesy Eggplant Chicken

- 4 chicken breast fillets
- 1 eggplant, cut into 5cm thick round sliced
- 1/2 cup parmesan
- 1/2 cup tasty cheese
- 200g green beans
- 1 cup tomato pasta sauce

What you'll need
Preheat oven to 200°C and lightly grease a large shallow baking dish.
2. Prepare chicken
Heat a chargrill pan on high. Brush the chicken with a little oil and season to taste. Chargrill for 3 – 4 minutes on each side until sealed and lightly browned. Place in a single layer in the baking dish.
3. Prepare eggplant
Brush the eggplant slices with the remaining oil. Chargrill for 1-2 minutes each side, until tender and light grill marks appear.
4. Prepare chicken to bake
Drizzle half of the pasta sauce over the chicken. Top with the eggplant slices and remaining pasta sauce. Sprinkle the combined cheeses over the top and season to taste.
Bake for 15-20 minutes until the chees is bubbling and golden.
