Caribbean Pork & Pineapple Rice

Ingredients (included in delivery)
- 500g pork mince
- 1 cup white rice
- 425g canned pineapple pieces, drained
- 4 spring onions, finely chopped
- 1 corn cob, kernels removed
- 1/2 cup fresh coriander leaves, to serve
- 1 lime, cut into wedges to serve
Ingredients (pantry items)
- 2 tbsp soy sauce
- 6 tbsp sweet chilli sauce
- 2 tbsp oyster sauce
- 3 cups chicken stock
- 2 tbsp olive oil

What you'll need
Soy sauce, sweet chilli sauce, oyster sauce, chicken stock, olive oil.
1. Prepare pork mince
In medium size bowl, combine the pork mince, soy sauce, 2 tbsp sweet chilli sauce and oyster sauce. Cover and chill in the refrigerator.
2. Cook rice
Add the stock to a large saucepan and bring to the boil. Add rice and cook for 8-10 minutes until tender. Drain and set aside.
3. Brown mince
Heat the olive oil in a large frying pan over a medium heat. Add the mince and brown for 4-5 minutes, while breaking up any lumps.
4. Add remaining ingredients
Add pineapple pieces, spring onions and corn kernels. Cook for a further 5-10 minutes, until the mince is cooked through.
Take off the heat and stir through the 4 tbsp sweet chilli sauce. Top with fresh coriander leaves and a squeeze of lime to serve.
