Caramelised Pork Chops

Ingredients (included in delivery)
- 4 pork loin chops
- 4 spring onions
- 4 eggs
- 1 red onion, cut into wedges
- 1 garlic clove, crushed
- 2 bacon rashes, rind removed, finely chopped
- 1 cup peas
- 1/2 cup coriander leaves

- 1/2 cup brown sugar
- 2 tbsp + 1 cup warm water
- 1 tbsp fish sauce
- 1 tbsp kecap manis
- 2 tbsp oil
- 250g cooked rice

What you'll need
Brown sugar, fish sauce, kecap manis, oil, cooked rice.
1.Prepare sticky glaze
Combine sugar and 1 cup water in a large, deep frying-pan. Cook and stir over heat until sugar dissolves. Bring to the boil and boil until mixture becomes syrupy.
2. Cook rice and prepare pork
Cook rice to packet instructions. Add chops and spring onion to sticky glaze mixture and stir. Add fish sauce, kecap manis and 2 tbsp water. Stir and bring to boil. Simmer for covered 10 minutes, or until pork is just cooked. Uncover pork and cook for a further 15 mins, or until pork is caramelised.
3. Prepare fried rice
Meanwhile, to make the fried rice, heat a wok or large frying-pan on high heat. Add oil, then egg and tilt pan to cover base and sides. Cook for 1 minute or until set. Slide onto chopping board, roll into a log and thinly slice.
4. Add remaining ingredients and cook
Add garlic and bacon and stir-fry for 3 minutes or until bacon is browned. Add cooked rice, peas and sliced egg. Cook for 3 minutes or until heated.
Serve pork with fried rice, drizzle with sauce and sprinkle with coriander.
