Cajun Spiced Salmon

- 4 corn cobs
- 4 salmon fillets
- 1 tbsp fresh parsley leaves, finely chopped
- Salad leaved

- 60g butter
- 1 tsp chilli flakes
- 1 clove of garlic, crushed
- 2 tbsp cajun seasoning
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar

What you'll need
Butter, chilli flakes, garlic, cajun seasoning, balsamic vinegar, olive oil.
1. Preheat grill or chargrill pan
Preheat a barbeque grill or chargrill pan over a medium heat.
2. Peel corn
Peel back the husks of the corn, and remove the silk. Tie the husks and trim.
3. Season corn
Heat butter, chilli flakes and crushed garlic in a small saucepan. Stir until melted and combined. Season. Brush corn with butter mixture.
4. Cook corn
Cook the corn, turning every few minutes, for 15 minutes or until browned and tender.
5. Prepare salmon
Meanwhile, sprinkle the Cajun seasoning over the salmon. Drizzle the barbeque plate or another chargrill pan with olive oil. Cook salmon for 3-4 minutes skin side down first, then for 3-4 minutes on the other side or until cooked to your liking.
Brush the corn with any remaining butter and sprinkle with parsley before serving. Serve with salmon and mixed salad leaves dressed in balsamic vinegar and olive oil.
