- 4 salmon fillets
- 1 tbsp fresh parsley leaves, finely chopped

- 2 tbsp olive oil

Butter, chilli flakes, garlic, cajun seasoning, balsamic vinegar, olive oil.
Instructions

1. Preheat grill or chargrill pan
Preheat a barbeque grill or chargrill pan over a medium heat. -
2. Peel corn
Peel back the husks of the corn, and remove the silk. Tie the husks and trim. -
3. Season corn
Heat butter, chilli flakes and crushed garlic in a small saucepan. Stir until melted and combined. Season. Brush corn with butter mixture. -
4. Cook corn
Cook the corn, turning every few minutes, for 15 minutes or until browned and tender. -
5. Prepare salmon
Meanwhile, sprinkle the Cajun seasoning over the salmon. Drizzle the barbeque plate or another chargrill pan with olive oil. Cook salmon for 3-4 minutes skin side down first, then for 3-4 minutes on the other side or until cooked to your liking. -
6. Serve
Brush the corn with any remaining butter and sprinkle with parsley before serving. Serve with salmon and mixed salad leaves dressed in balsamic vinegar and olive oil.
