Cajun Chicken Pasta

Ingredients (included in delivery)
- 500g chicken breasts fillets, thinly sliced
- 2 tsp cajun spice
- 2 spring onions, thinly sliced
- 1/4 cup sun-dried tomatoes
- 1/2 cup basil leaves
- 1 zucchini, thinly sliced
- 1 garlic clove, crushed
- 300ml cream
- 1/4 cup parmesan
- 400g pasta

What you'll need
1.Prepare chicken and vegetables
Combine the chicken and seasoning in a bowl. Heat the oil in a large frying pan over a moderately high heat and add the chicken. Cook and stir until browned. Add the spring onion, tomatoes, basil, zucchini and garlic. Stir and cook for 2 minutes, or until vegetables are tender.
2. Add cream and parmesan
Stir in the cream and bring to the boil. Reduce the heat to moderate and simmer for 5 minutes or until the sauce thickens. Stir in parmesan.
3. Prepare pasta
Meanwhile, cook the pasta in a large pot of salted water. Drain and return to the pot.
4. Combine ingredients
Add the chicken mixture to the pasta, toss over low heat for 2 minutes or until combined and heated.
Season to taste and serve with extra basil.
