Ingredients (included in delivery)
- 1L good-quality chicken or vegetable stock
- 200g rindless bacon, roughly chopped
- 1 onion, finely chopped
- 250g risotto rice, such as arborio or carnaroli
- 300g broccoli, cut into small florets
- 155g peas, defrosted if frozen
- 35g finely grated parmesan
Ingredients (pantry items)
- 1-2 tbsp olive oil
- 2 garlic cloves, crushed
- 125ml white wine, optional
- 15g butter, optional
To serve (optional, not included in delivery)
- Baby cos lettuce, leaves roughly chopped, optional
- 250g cherry tomatoes, quartered, optional
