Meat not your thing? Try this vegetarian zucchini slice with a twist! The simple addition of dukkah will add an extra level of flavour to this classic dish.

Serves: 6-10 people

Ingredients

6 eggs
1/4 cup plain flour (or gluten-free flour)
1/4 cup olive oil
3 large zucchini (grated)
1 carrot (grated)
1 brown onion (finely diced)
1/2 tsp sea salt
1 tbsp fresh dukkha
Freshly cracked pepper

Method
1. Preheat oven to 190°C and line a 30cm x 20cm dish with baking paper.
2. Beat the eggs in a large bowl, then mix in the flour and stir until smooth.
3. Add the oil, zucchini, carrot, onion, dukkah, salt, and pepper to the wet mixture, and stir to combine.
4. Pour into the baking dish and bake for 30-40 minutes, until golden brown.
