Lamb Shanks + White Beans

This hearty meal is the perfect way to warm up on these chilly days! Serves 4-6.

What you'll need...

  • 4 lamb shanks
  • 2 onions, cut into quarters
  • 6 garlic cloves whole
  • 4 sprigs rosemary
  • Bunch of fresh sage leaves
  • 2 cups red wine
  • Salt and pepper
  • 4 tablespoons olive oil
  • Knob of butter
  • 400g tin cannelloni beans
  • 400g tin whole tomatoes
  • Preheat oven to 180c
  • Coat lamb shanks with salt and pepper and set aside
  • Fry off rosemary and sage with the butter and olive oil. If using a casserole dish then use a frying pan. If you have a chausseur pot then you can do step two in the pot
  • Cook off onions and garlic until soft. Add lamb shanks and cook until golden
  • Increase heat to high and add red wine cook for about 2 minutes and then lower to a simmer. Add tomatoes and beans, cover and place in oven for about 1 1/2 to 2 hours. The longer the better I say!
