Crispy Salmon + Watermelon & Fetta Salad

You need...

  • 2 salmon fillets
  • 2 cups watermelon chopped into large chunks
  • 1/2 cup strawberries
  • 1/4 cup basil
  • Persian fetta
  • Salt pepper

And to prepare...

Place salmon on a plate sprinkle salt skin side up. Heat a little oil in a frying pan and cook salmon on each side for 3-4 minutes. Heat oven to 200'c

In a bowl place watermelon, chopped strawberries and basil and mix gently. Add Persian fetta and a dash of balsamic vinegar.
