Mango & Coconut Pudding
This is a great refreshing dessert, especially coming into the warmer weather. It's definitely one that needs to be made the day before and set overnight for the best results. Serve it with fresh, super ripe, juicy mango cubes.
3 mango cheeks
250ml mango nectar
125ml coconut milk
150g caster sugar
2 tsp powdered gelatine
Place the mango & nectar into a blender and blend until smooth.
Bring the coconut milk, cream and sugar to the simmer in a saucepan. Cook until the sugar dissolves.
Sprinkle over the gelatine and whisk to dissolve.
Combine the cream mix with the blended mangos and set into serving glasses. Set overnight
Serve with some fresh mango cubes and whipped cream.
